I really love cooking.  I’ve even been trying out new recipes lately because I get bored with eating the same thing all the time.  For those of you who also love trying new things, I will try to post my favorites and some of the really good new ones that I try.  So by request, here are the first two:


  • 2 eggs
  • 2 16 oz cottage cheese
  • 2 cups mozarella cheese
  • 1 cup Parmesan
  • 2 Tablespoons dried parsley
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • italian seasoning
  • 1 teaspoon minced garlic
  • Beat eggs slightly.  Stir in cheeses and spices.  Stuff into cooked jumbo shells or manicotti shells.  Pour a jar of favorite sauce on top (I make mine from scratch…not sure i I could come up with a recipe for that).  Sprinkle cheese on top.
  • Bake at 350 for 30-45 minutes.


  • 2 Tbsp olive oil
  • 1 medium onion
  • 1 clove garlic
  • 2 15 oz cans chick peas
  • 1 Tbsp rosemary
  • 4 cups chicken stock
  • 1 bay leaf
  • 1 8 ounce jar roasted red pepper
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Carmelize the onions in skillet with the olive oil.  Add everything into a crockpot and let simmer for several hours.  I added rice to the soup because I thought it needed something.  I think chicken would go really well in it, too.  I also added tabasco sauce to my bowl because I like it spicy.  Then again, I like everything spicy.
  • This wasn’t the best thing I have ever made, but I do like it and it is very healthy.  Well, except for the whole sodium thing.  I think if I play around with the recipe just a little I could make it nearly perfect.  Oh, and for those of you that are just as smart as I am…..chick peas and garbanzo beans are the same thing…most of the cans say garbanzo beans in much bigger letters….so save yourself about 15 minutes at the grocery store and look for garbanzo beans, not chick peas:)

It is best to cook in a crockpot for about 2 or more hours.

  • 1lb ground beef (cooked with some chopped onions)
  • 1 cup of salsa
  • 1 package of taco seasoning
  • 2 cans of corn
  • 2 cans of kidney beans
  • 2 cans of stewed or diced tomatoes
